Choosing Fresh Roots

When selecting salsify, look for firm, smooth roots that are free from blemishes, soft spots, or excessive branching. The skin should be a creamy white to light tan color. Avoid roots that appear wilted or have dark, sunken areas, as these indicate age or spoilage. Smaller to medium-sized roots often have a more tender texture and a less woody core than very large ones.

Storage Recommendations

Fresh salsify is best stored in a cool, dark place, much like other root vegetables. For short-term storage (up to a week), wrap the roots loosely in a damp paper towel and place them in the crisper drawer of your refrigerator. For longer storage, up to several months, you can store them in a cool root cellar or a dark, dry, and well-ventilated area. Ensure they are not washed until you are ready to prepare them.

Preparation Tips

Salsify can be prepared in various ways, including boiling, roasting, mashing, or frying. Due to its tendency to oxidize and turn brown quickly after peeling, it's advisable to peel and cut it just before cooking. Submerging the cut pieces in acidulated water (water with a little lemon juice or vinegar) can help prevent discoloration. The edible portion is the root, though the young shoots and leaves of some varieties can also be cooked.
